Cardamom French Toast Bake
All the comfort of French toast, none of the standing at the stove flipping slices. This overnight bake layers bread in a warm, cardamom-scented custard and soaks in the fridge, ready to bake into a golden, custardy breakfast in the morning. It is my favourite way to feed a group.
Cardamom gives it a fragrant, slightly exotic warmth that sets it apart from the usual cinnamon version. A crunchy brown sugar topping makes it feel like a treat.

Why this recipe works
Soaking the bread overnight lets it fully absorb the custard, so it bakes into a soft, set middle with crisp edges rather than a soggy or dry result. Cardamom infused into the custard perfumes every bite. A brown sugar topping caramelises for contrast against the tender centre.
What you'll need
Simple ingredients, a little time to soak:
- Bread: a sturdy loaf like brioche or challah; slightly stale is ideal.
- Cardamom: freshly ground is fragrant, but pre-ground works well too.
- Milk and cream: a mix gives a rich, custardy soak. All milk is fine for lighter.

Smart swaps: use any sturdy bread. All milk works for a lighter bake. Add orange zest or a splash of rose water for extra fragrance. Serve with maple syrup, fruit or a dusting of powdered sugar.
Cardamom French Toast Bake
Cosy overnight cardamom French toast bake. Serves 8.
Ingredients
- 1 loaf sturdy bread, cubed
- 8 large eggs
- 2 cups (480 ml) milk
- ½ cup (120 ml) cream
- ½ cup (100 g) granulated sugar
- 2 tsp ground cardamom
- 2 tsp vanilla extract
- ¼ tsp salt
- For topping: ⅓ cup (70 g) brown sugar + 3 tbsp butter
Method
- Butter a 23x33cm (9x13-inch) dish and add the cubed bread.
- Whisk the eggs, milk, cream, sugar, cardamom, vanilla and salt. Pour evenly over the bread.
- Press the bread down so it soaks, cover, and refrigerate overnight.
- In the morning, let it sit 30 minutes. Heat oven to 175°C / 350°F.
- Dot with the brown sugar and butter topping, then bake 40–50 minutes, until puffed and golden.
- Rest 5 minutes, dust with powdered sugar, and serve.
Step by step
Step 1 — Soak the bread overnight
Pour the cardamom custard over the bread and press it down so every piece drinks it in. An overnight soak is what makes the middle custardy.

Step 2 — Add the topping
In the morning, dot the brown sugar and butter topping over the surface so it caramelises into a crunchy layer as it bakes.
Step 3 — Bake until golden
Bake until puffed, golden, and set in the centre. A rest and a dusting of sugar, and it is ready to serve.

Pro tips
- Use sturdy bread. Brioche or challah, slightly stale, soaks best without turning to mush.
- Soak overnight. This gives the custardy centre; a short soak stays dry inside.
- Do not skip the rest. Letting it warm up helps it bake evenly.
- Watch the topping. The brown sugar can darken quickly near the end.
- Cover if browning fast. Tent with foil if the top colours before the middle sets.
Storage & make-ahead
Leftovers keep in the fridge for up to 3 days and reheat well in the oven or microwave. Baked portions freeze for up to 2 months. The whole point is make-ahead: assemble and refrigerate up to 24 hours before baking for a stress-free special breakfast.
Variations & substitutions
- Orange-cardamom: add orange zest to the custard.
- Berry: scatter berries between the bread.
- Rose: add a few drops of rose water for a floral note.
- Smaller batch: use the ½x scaler and a square dish.
Frequently asked questions
Can I assemble it the night before?
Yes — that is the point. Soak overnight, then rest and bake in the morning.
What bread is best?
A sturdy, slightly stale loaf like brioche or challah. Soft sandwich bread can turn mushy.
Why is my bake soggy in the middle?
It may need longer in the oven, or the bread was too soft. Bake until the centre is set and use sturdy bread.
Can I make it dairy-free?
Yes — use plant milk and a dairy-free spread; the texture is slightly lighter.
