This sheet cake brings together two of my favourite flavours — warm, fragrant cardamom and buttery pistachio. It is soft, gently spiced, and made in a single tin, which makes it perfect for feeding a crowd without any layering or fuss. A scatter of chopped pistachios on top is as fancy as it needs to get.

  • ¾ cup (170 g) unsalted butter, softened
  • 1¼ cups (250 g) granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups (240 g) all-purpose flour
  • ¾ cup (90 g) ground pistachios
  • 2 tsp baking powder
  • 2 tsp ground cardamom
  • ¾ cup (180 g) plain yogurt
  • ½ cup (60 g) chopped pistachios, for topping

Method

  1. Heat oven to 175°C / 350°F. Grease and line a 23x33cm (9x13-inch) tin.
  2. Cream the softened butter and sugar until fluffy. Beat in the eggs and vanilla.
  3. Whisk the flour, ground pistachios, baking powder and cardamom.
  4. Add the dry mix alternately with the yogurt, mixing just until smooth.
  5. Spread into the tin and scatter the chopped pistachios over the top.
  6. Bake 28–34 minutes, until a skewer comes out clean. Cool before glazing or serving.
